My Life Lately: Banana Cake Recipe!!~

These past weeks have been a whirlwind! šŸŒ€ Between my 30km weekly runs, writing job, walking the dogs šŸ•šŸ•, house cleaning, and a second house renovation šŸ› ļø, it’s been a lot! I hoped to stick to my weekly writing goal, but life kept getting in the way, and PMS didn’t help. šŸ˜…

But I still made time for one thing I love: baking. This week, I baked a banana cake šŸŒ, and it was amazing! It’s one of the first recipes I learned, and it always brings me comfort. There’s something so satisfying about mashing bananas, mixing it all up, and seeing that golden loaf come out of the oven. 🄰

Since writing’s been on the back burner, I thought I’d share my banana cake recipe. It’s easy, fun, and perfect when you need a pick-me-up (or have some ripe bananas lying around!). Here’s how to make it: šŸ°šŸ‘‡:


Jhana's Banana Cake Recipe


Ingredients:

  • 6 very ripe bananas

  • 1 ½ cups all-purpose flour

  • 3/4 cup brown sugar

  • ¼ cup butter, softened

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda

  • ½ teaspoon baking powder

  • Raisins, chocolates and nuts (optional, but a tasty addition!)


Directions:

  1. Preheat your oven to 350 degrees F. Prepare a loaf pan.

  2. In a large bowl, mash the bananas until smooth.

  3. Add in the flour, sugar, softened butter, eggs, vanilla extract, baking soda, and baking powder. Mix everything together until it’s well combined.

  4. If you like, toss in some raisins, chocolates and nuts for extra texture and flavor.

  5. Pour the batter into your prepared loaf pan.

  6. Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
